Interview with the operator stated all items were prepped and placed in containers on Monday, Oct. 21. Shelving located inside the two-door cooler located next to the back door of the kitchen has visible rust. The three-bay sink was noted to be leaking at time of inspection. A bucket was being actively used to catch dripping water coming from sanitize bay of sink.

• Daphine’s Diner, 15085 Route 104, Martville: satisfactory (Oct. 29). Food items are being improperly stored in reused nonfood grade containers. The floor of the walk-in cooler is covered in a layer food debris, and is not smooth and easily cleanable. The linoleum throughout the kitchen is cracked, broken and missing pieces. The shelving in the main kitchen requires cleaning and a coat of sealant.
• New China Royal, 103 Genesee St., 69´«Ã½: unsatisfactory (Oct. 29). Improper cooling and refrigerated storage of potentially hazardous foods. The two-door cold holding unit (sandwich prep station unit) located on cook line had an ambient temperature of 62 degrees Fahrenheit at time of inspection. Interview with the operator indicated the unit has been broken and that a new one is to be purchased. One quart of pork (temperature 52 degrees Fahrenheit), 1/2 cup of tofu (temperature 46 degrees Fahrenheit), 1/2 cup fish (temperature 48 degrees Fahrenheit) and approximately 4 quarts of lo mein noodles (temperature 62 degrees Fahrenheit) were discarded at time of inspection. All freezer units lack thermometers. Shelving located in walk-in cooler noted to have rust accumulation.

A spare thermometer was obtained from an adjacent facility to ensure cooking temperatures were monitored and achieved. Will reinspect within 1 week.

• Taqueria Como En Casa, 243 E. Main St., Elbridge: unsatisfactory (Nov. 7). Cooked or prepared foods are subject to cross-contamination from raw foods. Potentially hazardous foods are not covered by an approved method where the food temperature can be reduced from 120 degrees Fahrenheit to 70 degrees Fahrenheit or less within two hours and 70 degrees Fahrenheit to 45 degrees Fahrenheit within four hours. Potentially hazardous foods are not stored under refrigeration except during necessary preparation or approved precooling procedures (room temperature storage). Food not protected during storage, preparation, display, transportation and service, from potential sources of contamination (e.g. food uncovered, mislabeled, stored on floor, missing or inadequate sneeze guards, food containers double stacked). Single service items reused, improperly stored, dispensed, not used when required. Adequate, leakproof, non-absorbent, vermin-proof, covered containers not provided where needed. Routine second inspection conducted. Discussed proper techniques and best practices for cooling, hot holding and cold holding/storage. Operator provided link to review Subpart 14-1 of the NYS sanitary code.
